I found a recipe the other day that I knew I wanted to try but I didn’t have all the ingredients.
When I got home from grocery shopping yesterday, I realized that without even meaning to I’d picked up everything I needed! That’s the kind of little miracle that I absolutely love.
Tonight I was thoroughly satisfied with the results of my first go at this “Maple Apple Oatmeal Crisp”, so I thought I’d share it with you. And it’s even not-entirely-bad-for-you… 🙂
Filling:
- 6 cups peeled, thinly sliced apples (about 6-8 medium or 4 large apples)
- 1/2 cup dried cranberries
- 1/3 cup maple syrup
- 1 Tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (but I’m not a huge fan of nutmeg so I substituted ground ginger, which I like a lot)
Topping:
- 1 cup oats
- 3/4 cup brown sugar
- 1/3 cup flour (I used gluten free flour and it didn’t seem to make any difference)
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 4 Tablespoons melted butter
Directions:
- Preheat oven to 375 degrees
- Lightly oil an 8×8 baking dish
- Toss the filling ingredients together and spread evenly in the baking dish
- Mix all dry topping ingredients. Add butter to topping ingredients and stir until evenly moistened. Sprinkle over the fruit.
- Bake for 35 to 40 minutes.

I really appreciate this post. I wish more nutritionists were aware of the good that Miracle Fruit offers. Anyway, I just wanted to say cheers!
