Miracle of the apple crisp

For the record, this is a picture I found online - I didn't take a picture of what I made. 🙂

I found a recipe the other day that I knew I wanted to try but I didn’t have all the ingredients.

When I got home from grocery shopping yesterday, I realized that without even meaning to I’d picked up everything I needed!  That’s the kind of little miracle that I absolutely love.

Tonight I was thoroughly satisfied with the results of my first go at this “Maple Apple Oatmeal Crisp”, so I thought I’d share it with you.  And it’s even not-entirely-bad-for-you…  🙂

Filling:

  • 6 cups peeled, thinly sliced apples (about 6-8 medium or 4 large apples)
  • 1/2 cup dried cranberries
  • 1/3 cup maple syrup
  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (but I’m not a huge fan of nutmeg so I substituted ground ginger, which I like a lot)

Topping:

  • 1 cup oats
  • 3/4 cup brown sugar
  • 1/3 cup flour (I used gluten free flour and it didn’t seem to make any difference)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 4 Tablespoons melted butter

Directions:

  • Preheat oven to 375 degrees
  • Lightly oil an 8×8 baking dish
  • Toss the filling ingredients together and spread evenly in the baking dish
  • Mix all dry topping ingredients.  Add butter to topping ingredients and stir until evenly moistened. Sprinkle over the fruit.
  • Bake for 35 to 40 minutes.

    I really appreciate this post. I wish more nutritionists were aware of the good that Miracle Fruit offers. Anyway, I just wanted to say cheers!
