Leah Carey writes a (almost) daily Miracle Journal. Of course this always gets me thinking (which I suppose is part of Leah’s point) about the miracles that happen in my life.
I’ve known since the middle of the week that my favorite farm stand, Campton Farm, would be opening today. Even though I knew the selection was going to be limited to radishes, lettuce, and spinach I’ve been worse than a kid at Christmas all week long. I planned out the whole menu incorporating these items. I could hardly bear the slow creep of the hands on the clock to finish out an afternoon of work.
When I arrived at the farm I drove right up to the greenhouse where it was like “old home day”, and we spent some time catching up on our lives. I went into the greenhouse, looking everything over, taking in all the sights, smells, and tropical warmth. When I decided how much of the items I needed to purchase Al got out his scissors and started snipping lettuce and spinach. He handed me a bag and told me to pull my radishes. The first one I pulled out of the soil was immediately wiped off on my shirt and eaten on the spot! Talk about freshness!
Within a couple of hours I had prepared the most amazing salad and side dish with these ingredients and a couple of additions from my fridge. We are so fortunate to live in a place where we can have the freshest, most nutritious food grown so close to where we live. Good food doesn’t get any better than this.
