Can I be honest? (Well, that’s a silly question – I’m usually pretty honest around these parts 🙂 )
A few weeks ago I committed myself to taking part in the 10-Pound Challenge being hosted by Newlyweds On A Budget. At the time I acknowledged that the timing wasn’t great, given that I’m grieving a breakup.
I’d like to go back and clarify that statement. Trying to lose weight during a break up is just about the stupidest thing I can imagine. ‘Nuff said.
But I’ve definitely slid too far the other way. When I’m stressed or sad, the first thing that goes is cooking for myself and making healthy food choices. I’m never a terribly junky eater, but there’s a world of difference between baking some chicken and picking up a Lean Cuisine supper or a frozen pizza. I’ve spent a fair amount of my grocery budget on Lean Cuisine and frozen pizzas recently.
Yesterday I had two wake-up calls. The first was when I opened my fridge and smelled something really terrible. Let’s just say that there’s conclusive evidence that I have not been eating my vegetables for the last several weeks.
Later in the day I had stomach pain unlike anything I’ve ever experienced before. I got scared that I might have a problem with my appendix. It resolved after a few scary hours, but it definitely got my attention.
Time to start paying more attention to what I’m eating.
So tonight – a new leaf! There is currently a beef stew cooking in my Crock Pot overnight. For dinner I had a kale smoothie (well, a spinach smoothie because the grocery store didn’t have any kale…still tasted pretty darn yummy!) I’ve gotten out of the habit of making smoothies, but it’s so easy! I also made an apple crisp so that I’ll have a healthy sweet.
So this week – spinach smoothies for breakfast! Beef stew for lunch! I haven’t figured dinners out yet, but I’ll get there. At least there aren’t any frozen meals in my freezer. 🙂

First, so glad your stomach ache wasn’t serious and I hope you made sure that was true.
Second, the Crock Pot is my saving grace. Chicken Cacciatore this week for dinner means I actually get some vegetables during the day. For breakfast and lunch I eat pretty much the same thing every day so I don’t have to even think about it. Not everyone can achieve that level of boredom but I tell myself it leaves more room for creativity in other areas.

Chicken baked in salsa is one of our all time favorites. Also baked chicken stuffed with light cream cheese, sundried tomatoes and basil with a marinade of Newman’s Own Lt. Sundried Tomato Salad dressing. Both are easy to make, and make excellent leftovers. A little Uncle Ben’s 10-minute brown rice on the side and vegetable of choice. Very easy for those who get home late.

I’m going to have to try chicken baked in salsa, Jane. I’m not a fan of cream cheese, but sundried tomatoes, basil, and Newman’s dressing sounds fantastic! 🙂 Thanks for the suggestions.

You can do it! Just need to keep sticking with it. check out skinnytaste.com she has great tasting recipes that are super healthy too!

It’s okay to nourish yourself with food. That’s the point of food — nourishment. Don’t beat yourself up! But think of how hot you’ll look if he EVER runs into you.
